What is the most crucial part that defines the categories of tea? It is Oxidizing. When enzymes in the tea leaf interact with oxyen and also after the cell walls are broken apart is when oxidation occurs. This usually can happen fairly quickly, through rolling, cutting or crushing, or more slowly through the natural process of decomposition of the leaf. You will actually, see the same process in a piece of fruit. when left to sit, an apple will slowly turn brown. Also an apple will brown much more quickly, when cut or bruised.
